Jerry's Cajun Oriental Chicken

1 rotisserie chicken (lemon pepper)
olive oil
1 bag Success rice
1/2 cup cream of mushroom soup
Louisiana Cajun seasoning
Sweet and Sour Sauce

Using half of the breast and one leg of the precooked chicken, cut the chicken into small pieces (1/4 to 1/2 inches in length). Cook in skilled greased with olive oil until golden brown.

Cook bag of rice for 12 to 14 minutes in boiling water. Drain and pour into a bowl big enough to be stirred easily. Use 1/2 cup of cream of mushroom soup and add a small amount of water. Pour into rice mixture and season with salt and pepper, stirring well. Sprinkle with Cajun seasoning. (Careful, this sauce seasons quickly). Stir thoroughly. Pour chicken into rice and stir. Serve with a side dish of sweet and sour sauce. Dip the fork into the sauce before taking a bite of the chicken.
