Brunch and Breakfast Casserole

8 eggs boiled
2 lbs. Jimmy Dean Maple sausage
1 large cup sour cream
6 slices of toast (crumbled)
1 bag shredded sharp cheddar cheese
1 bag mozzarella cheese
1/2 stick butter

Mix crumbs & both cheeses in separate bowl. Cook eggs and set aside. Brown sausage in skillet. Slice eggs in bottom of large casserole, add salt & pepper to taste. Spread sour cream over eggs & sausage. Dice butter & put over mixture. Cover completely with bread crumbs & cheese. Bake at 350 degrees until cheese is melted & brown.

So good! Very handy for company, this may be prepared the night before & put in refrigerator. Bake it the next morning.

Trifle Cake

1 box vanilla pudding mix(instant)
2 pints blueberries
1/2 cup chopped nuts
1 large container of Cool Whip
1 large can crushed pineapple

Mix pudding according to directions and set aside. Break Angel food cake into pieces in a large bowl.

In bowl, layer cake pieces, pudding, strawberries, blueberries, pineapple, and Cool Whip. Repeat layers until bowl is filled. Finish with Cool Whip, strawberries, blueberries, and nuts.
