Cucumber Hors d'oeuvres

Take 1 long hot house or English cucumber. Strip the greenery on outside. Cut into 1 inch pieces. With a melon baller scoop out area containing the seeds (be sure not to scoop all the way through cucumber). Turn cucumbers upside down and drain. Fill with either your favorite chicken salad recipe or the chicken salad recipe listed below:

Chicken Salad

4 bone-in, skin-on large chicken breasts
1 can of chicken broth
2 cans of water
2 sticks of celery chopped fine
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1/2 teaspoon of mild curry powder
1/2 to 1/3 cup of mayonnaise (consistency for salad)

Cook the chicken breasts with 1 can of chicken broth and 2 cans of water. Cook until done. Drain chicken (you may reserve the broth for other dishes). After cooking remove the skin and bone. In a food processor pulse chicken until fine. Add 2 sticks of celery chopped fine; 1/4 teaspoon of salt; 1/4 teaspoon of black pepper; 1/2 teaspoon of mild curry powder. Add 1/2 to 3/4 cup of mayonnaise. Stir together.

Keep refrigerated until you serve.

Warm Brie with Caramel Sauce

1 cup granulated sugar
2 tablespoons butter
nuts (walnuts or pecans)
Brie cheese

In an iron skillet or sauce pan with heavy bottom place 1 cup granulated sugar on medium heat. It is important to carefully watch so as not to burn. DO NOT STIR - ONLY SHAKE THE PAN. Remove from stove when sugar turns amber brown in color. Stir in butter. Add nuts (either walnuts or pecans). Take 1 pound Brie Cheese, place on microwaveable plate. Microwave for 3 minutes. Remove from microwave and pour caramel sauce over Brie Cheese. Serve with water crackers.

Puffed Pastry

1 pkg frozen puffed pastry sheets
1 12 oz pkg smoked Atlantic salmon
fresh dill

Thaw puffed pastry sheets about 15 to 20 minutes. Cut out circles with a 2 inch cookie cutter. Spray a baking sheet with either Pam or Bakers Joy. Sprinkle the pan with cold water. Place pastry circles onto pan. Place in a pre-heated 375 degree oven for 20 minutes or until golden brown. Cool for 1/2 to 1 hour. Take a sharpe knife and slice open. Take the 12 oz. pkg of smoked Atlantic salmon and cut into squares. Replace the top of the puffed pastry. Top with fresh dill

Stuffed Cherry Tomatoes

1 pkg Cheery Tomatoes (1" in diameter)
8 oz. pkg. Cream Cheese and a 4 oz. pkg Cream Cheese
1/2 stick of butter (room temperature)
1 jar prepared pesto sauce

With a sharpe knife, slice piece off bottom of tomato to allow tomato to stand. With a sharpe knife, slice the top of the tomato to ensure all are the same depth. Take a mellon baller and scoop out the center of the tomatoes and turn them upside down to allow juice to drain out. Whip up cream cheese and butter until light and smooth. Blend 3 tablespoons of prepared pesto sauce into cream cheese mixture. Turn tomatoes up. Using a "star tip" pastry bag, pipe into the tomatoes. Sprinkle with fresh herbs.
