Program #118
Guest:Nancy Welch

Spaghetti Sauce

1 pound of ground beef
1 envelope Lawry’s Spaghetti Sauce Mix
1 envelope Sauer’s Spaghetti Sauce Mix
8 oz. can tomato sauce
1-1/2 tomato sauce can of water
6 oz. can tomato paste
1-1/2 cups water

Brown ground beef and drain. Combine the remaining ingredients and simmer 30 minutes. While this is cooking, cook noodles and serve spaghetti sauce over noodles. Freezes great so make a couple or triple batch for another time.

Italian Boneless Chicken

8 boneless chicken breasts
2 cups from Spaghetti Sauce (or a jar of spaghetti sauce)
1 cup grated mozzarella cheese

Place chicken in greased casserole in one layer. Salt and pepper chicken. Pour spaghetti sauce over chicken. Bake at 350 degrees for 45 minutes or until done. Sprinkle cheese over top. Return to oven and bake until cheese melts. May be served with noodles. Note: Prepare this dish and bake 30 minutes during an assembly time. Then refrigerate. When you are going to serve this dish, bake for an additional 30 minutes, put on the cheese and bake until cheese melts. During this last baking time, prepare rice or noodles to serve with the chicken. Double this recipe or make it in smaller casseroles if your family will not eat 8 pieces of chicken at one meal.

Savannah Chicken

8 pieces of chicken
Mayonnaise (or yogurt for low cholesterol version)
1 cup cornflakes, crushed
3 tablespoons sesame seeds
Salt and pepper

Coat chicken in mayonnaise. Mix together cornflakes and sesame seeds. Dip chicken into mixture. Salt and pepper each piece of chicken. Place chicken in greased baking dish. Bake at 350 degrees for 1 hour. Double this recipe or divide it and have one for the freezer.

Chicken and Dried Beef Casserole

1 cup sour cream
1 can cream of mushroom soup
1 jar dried beef
8-10 chicken breasts
Bacon

Line baking dish with dried beef. Wrap each piece of chicken with a piece of bacon. Place chicken in dish. Mix soup and sour cream. Spread over chicken. Bake uncovered at 300 degrees for 3 hours. Do not salt chicken. Double this recipe or divide it for another time.

Chicken in Cream Sauce

8 chicken breasts
1 cup sour cream
2 cans cream of chicken soup
1 roll Ritz crackers

Mix soup with sour cream. Pour over chicken. Crush crackers and spread on top. Bake at 350 degrees for 1 hour. Double this one as well or divide for another meal.
