Chocolate Fudge Cakes and Icing

2 squares unsweetened chocolate
1 stick butter
3 eggs
1 cup sugar
4 Tablespoons flour
1 teaspoon vanilla
Melt butter and chocolate together. Combine eggs, sugar, flour, and vanilla. Add chocolate and butter. Bake in 8x8” pan lined with waxed paper at 350 degrees for 25 minutes.

Icing

2 squares unsweetened chocolate
1 stick butter
1 egg or egg beaters
2 cups powdered sugar
Pecan halves (optional)

Melt butter and chocolate together. Stir sugar and egg together. Add chocolate and butter mixture. Beat until smooth. Spread on cake while cake is still warm. Cut into squares and separate so that icing runs down onto sides of each square. Place a pecan half on top of each square if desired.

Easy Coconut Cake

1 pkg. white cake mix
1 cup sour cream
1 cup sugar
1 pkg. large bag of coconut
1 large carton Cool Whip

Make white cake according to package directions. When cake is done and cooled, slice into 4 layers. Make filling by mixing sour cream, sugar and half of coconut. Spread this filling over layers. Ice the cake with the Cool Whip and sprinkle with remaining coconut. Keep refrigerated.

Cowboy Cookies

2 sticks butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 cups plain flour
1 teaspoon baking soda
teaspoon salt
teaspoon baking powder
2 cups rolled oats
1 teaspoon vanilla
6 oz. chocolate chips

Blend butter and sugars until fluffy. Add eggs and beat well. Add all dry ingredients to egg mixture. Add in oats, vanilla and chips. Drop by teaspoon onto greased cookie sheet. Bake 15 minutes at 350 degrees. Remove from pan and let cool.

Blueberry Holiday Squares

1 cups sugar
2 sticks butter
4 eggs
2 cups plain flour
1 tablespoon lemon or almond flavoring
1 can blueberry pie filling
Powdered sugar

Gradually add sugar to butter and cream. Add eggs, one at a time. Add flour and flavoring. Pour into greased and floured jelly roll pan (15x10x1). Mark off 20 squares with a knife. Place 1 tablespoon of pie filling on each square. Bake at 350 degrees for 40-50 minutes. While warm, sprinkle powdered sugar over cake. Finish cutting into squares.
