Whole Wheat Blender Pancakes
1 cup of whole wheat berries
1 cup of water
1/2 cup of oatmeal
1/4 of walnut oil
1/4 of honey
1 TSP of baking powder
1 TSP of baking soda
1 TSP of vanilla
1 egg or egg replacer

Place all of the above in a blender and blend for 5 minutes in a regular household blender or less than 2 minutes in a high power blender such as a Vita Mix.

Cook on hot skillet with a little cooking spray. Add blueberries if you would like to have blueberry pancakes. Serve with maple syrup and butter.

Whole Wheat Banana Muffins
5 large ripe bananas mashed
1 egg or egg replacer
1/2 TSP of sea salt
1 TSP of baking soda
1 cup of raw sugar
1 TSP of baking powder
1/4 cup of butter softened
1 cup of chopped pecans or walnuts
1 and 1/2 cup of whole wheat flour

Preheat oven to 375. Mix all ingredients except flour. Gradually add flour, stirring lightly. Pour into greased muffin tins or small loaf pans. Bake for 15-20 minutes or until golden brown. Yields 2 dozen large muffins.

Note: Over ripe bananas can be frozen with skins removed to use as needed in breads and muffins.

Fruit Granola Cup
1/3 cup of granola
1/4 cup of plain or vanilla yogurt
1/4 cup of fresh cut up fruit

Layer in a pretty glass dish and top with a little yogurt and a piece of fruit. Serve for breakfast or as a snack.
